Introduction:

Ingredients:
- 1 cup rajma( soaked overnight)
- 2 medium size onion, finely chopped
- 2 medium size tomato, pureed
- 1 tbsp ginger-garlic paste
- 4-5 green chillies
- 1 tbsp cumin seeds
- 1 tbsp mustard seeds
- 1 tbsp red chilli Powder
- 1 tbsp tarmaric pawder
- 1 tbsp coriander pawder
- 1 tbsp garam masala
- 2 tbsp oil/ ghee
- Salt to taste
- Fresh coriander leaves
Let' s start:
1. Soak & Boil the Rajma:
After making rajma, soak the rajma in water the night before. Then drain the remaining water first. After that put the rajma in the cooker and add 3-4 cups of water and cook the rajma for 3-4 whistles till it becomes soft but do not mash the rajma too much.
2. Start the Masala Base:
Firstly in a deep pan and let it heat up. Then add oil or ghee to it. Then add cumin seeds or mustard seeds to it and let it sizzle. Then add onions and saute till it turns golden brown. After it is done, add ginger-garlic paste and sauté it.
3. Build the Flavors:
now added a tomato pureed, 1/2tbsp tarmaric powder, 1 tbsp red chilli powder, 1 tbsp coriander powder or stir everything thoroughly and cook mixture till oil separates from masala. It may take approximately 5-7 minutes for you to be patient.
4. Add the Cooked Rajma:
now added the boiled rajma along with the water it was cooked in. stir everything to combined rajma with masala. Added the salt to taste and Then let it cook for 15-20 minutes on low flame. This step will give your rajma the flavor of spices.
5. Finishing Touch:
After some time, add 1 tablespoon garam masala and let it cook for 2-3 minutes.
6. Serve & Enjoy:
Once the rajma is cooked, add fresh coriander leaves to it. Serve it with hot rice or roti. Your comfort and favourite dish is ready.
Tips for pro:
- If you soak the rajma beans overnight they will cook quickly.
- If you like a creamier texture, you can mash some beans and add that thickness to the grave.
- You can adjust the spices level according to you like.
