1 carrot, chopped ½ cup peas

How to start

Step1:Rinse the Rice

Make the Spices Sizzle In a big pan or pressure cooker, heat oil or ghee over medium heat. Add the cloves, cinnamon stick, bay leaf, and cumin seeds. Give them a few seconds to sizzle and unleash their perfum

Step 3:Cook Onions and Vegetables

When the onions get golden brown, add the slices and simmer. Add the slit green chile and ginger-garlic paste (if using), and sauté for an additional minute. After adding the mixed vegetables, sauté them for an additional three to four minutes.

Step4 :Add Spices and Rice

Mix carefully after adding the salt, garam masala, and turmeric powder to the pan. Gently stir in the drained and soaked rice, mixing everything well.

Step5:Let It Rest:

After adding two cups of water to the pan and bringing it to boil, turn down the heat. Once the water has been absorbed and the rice is done, cover and simmer for around fifteen minutes. After that, use fork to fluff the rice and turn off the heat.

Step6:Garnish and Serve

Add few freshly chopped mint leaves or coriander to the pulao. Serve hot with wedge of lemon juice for taste, or with raita on the side.
