Ingredients for mater Panner:

  • 200 gm panner
  • 1 cup green peas
  • 3 medium size tomato( pureed)
  • 1 inch ginger ( paste or greated)
  • 2-3 green chillies ( finaly chopped)
  • 1 tbsp cumin seeds ( jeera)
  • 1/2 tbsp turmeric powder 
  • 1/2 tbsp red chilli Powder 
  • 1 tbsp coriander powder 
  • 1 tbsp fresh garm masala
  • 1/2 tbsp thick yogurt ( optional)
  • 1 tbsp kasuri methi 
  • Salt to taste 
  • 2 tbsp oil or ghee
  • Fresh coriander leaves ( for Garnishing)
  • Fresh cream ( optional)

 Let's see how to make it step by step:

Preparing for Panner and mater:

  • If your using fresh peas then boil it in salt water, become soft and keep a side. If you use frozen then rise them in warm water and keep a side.
  • In a pan heat the 2 tbsp ghee and lightly fry the panner cube until become golden brown. This step is optional but it's give lovely texture in your mater panner. Keep.the fryer panner in warm water to keep it soft.

Make the tomatoes gravy:

  • Heat a pan in medium flame and 2 tbsp of ghee. Add cumin seeds and let them splutter.
  • Add greated ginger and green chillies in it.and stir a minute until fragrant. 
  • Then add tomato puree in it and cook over a medium flame. Cook until oil started saprated from it. This process ensure the raw taste of tomato is gone.
  • Then mix turmeric powder, red chilli powder, coriander powder and salt in it. And cook 2-3 minute until spices are blend with tomato base.


Combine panner and peas:

  • Add a boiled or rise pease in to tomato gravy. Them mix it well  and simmer it upto 5 minute. 
  • Then add panner cube in it. Be careful not to be brake. Mix Well and cook it another 2-3 minutes.  Allowing to flover  to melts.

Finish with creamier touch:

  • Add fresh cream or thick yogurt for rich texture. This step is optional but add depth flover in meter panner.

  • Crush the kasuri methi between your palm and Sprinkle it in over the curry and mixed well. 

Garnish and Serve:

Garnish with fresh chopped coriander leaves and cream for restaurant stlye finishing. Serve it hot with rice, roti, naan.

Tips for perfect meter panner :

Use ripe tomatoes:

Because of the natural sweetness of tomatoes it's help to balance the flover in absence of Onion and garlic.

Adjust spices :

In absence of Onion and garlic you can add hing or black pepper powder for best flover.

Panner freshness:

Use fresh and soft panner for mater panner. I am using home made panner it's wonderful in the recipe.

Ghee vs oil:

Ghee is the best option for it adds the rivh flover in mater Panner. If you are vegan then you can use oil also.
