Best Mumbai Style Amazing Vada Pav Recipe

Ingredients you'll needs:
For potato vada:
- 4 medium size potato (mashed)
- 2 tbsp oil
- 1 tbsp cumin seeds
- 1 tbsp mustard seeds
- 1 tbsp ginger garlic paste
- 2-3 green chillies
- 10-12 Curry leves
- A pinch of hing
- 1/4 tbsp tumaric powder
- Fresh coriander leaves
- Salt as per taste
- 1 cup besan
- A pinch of turmeric powder
- Salt a par taste
- A pinch of baking soda
- 1 cup coriander leaves
- 1/2 cup Mint leaves
- 2-3 green chillies
- 2-3 garlic cloves
- Salt as per taste
- A little water
Let's see how to make it:
Make the potato mixture:
- Firstly heat a pan and added the mustard seeds and cumin seeds Let's them sizzle.
- Added a Curry leves, green chillies and ginger garlic paste and saute for 1-2 minutes.
- Add a pinch of turmeric powder, hing and mixed well.
- Added the salt and coriander leaves and keep them to cool.
- After a get cool make the small round balls.
Prepare the batter:
- I a bowl add beasn, turmeric powder, salt and baking soda For puffyness.
- Add water slowly and mixed it smooth and thinly batter.
Fry the vada:
- Heat the oil in pan.
- Deep each balls in the batter and coated it well.
- Droped coated balls in the heat oil and fry it until it becomes golden brown.
- Take them out and put on tissue paper tu remove excess oil.
For green chutney:
- In a mixture grander add coriander leaves and Mint leaves, 2-3 green chillies and garlic cloves and added some cold water for smooth consistency

For the red chutney:
- In a heat oil drop the small small balls of batter and fry it until become golden brown and take it out and keep them for cool.
- In a mixture grander add balls of batter, 2-3 garlic cloves , some red chilli powder, salt, cumin seeds and grind it.
- Now your red spicy chutney is ready tu eat.
Assembling the vada pav:
- First cut the bundle pav into two part.
- Spread the spicy green chutney on it and sprinkle the red chutney on it .
- Keep a hot vada inside and press with another burn half bun.
