Tips for Perfect and amazing spongy khaman dhokala Recipe
Soft ,spongy and tasty recipe that comes form state Gujarat that is " khaman dhokala " the most famous dish. It's make with the Basan and it's Stream method make the recipe more healthier and low calories that help you to your weight loss journey. You can eat it in breakfast, evening snaks and evan light dinner also. This dies is not only is easy to make but also get ready in just 20 minutes. Ingredients you'll needs :
For batter:
- 1 cup besan
- 1/2 sooji
- 1/2 cup curd
- 1/4 cup water( as you need)
- 1/4 tebalspoon turmeric powder
- 1 tebalspoon sugar
- Salt as par taste
- 1 tebalspoon Eno
For tempering:
- 1 tebalspoon oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- Salt as par taste
- 2 green chillies
- A few Curry leaves
- 1/2 Lemon juice
- Fresh coriander leaves ( chopped)
- Fresh coconut grated ( garnish)
Let's see how to make it step by step:
Preparing batter:
- In a mixing bolwe add basan, sooji, turmeric powder, suger and salt. Add slowly water in it and mixed ir well. Make sure it's not lumps.
- Let's keep batter rest for 10-15 mints.
Add Eno and make dhokla:
- Just before the strem add the Eno in batter and mixed it in one direction. This make dhokala fuffy and smooth.
- Place it streamer or pressure cooker without whistles.
- Strem on medium flame 15-20 minutes.
- To check it add a toothpick in center if toothpick is clear than your dhokala is ready.
- Cook for another 5 minutes and cut it into square or diamond shape.
Prepare for tempering:
- In a small pan add 1 tablespoons oil and let the heat.
- Than add cumin and mustard seeds in it and let Tham sizzal.
- Add a Curry leaves and Chooped green chillies in it and added some salt for taste and turn off the heat.
- Pour the tempering after evan cut the dhokala piece.
Garnish and serve:
- Garnish with chopped coriander leaves and greated coconut on top.
- And serve with the green chutney, sweetheart or tamarind chutney.
Tips for best result:
- After adding the Eno don't wait for long , strem it immediately.
- Don't overmix after adding Eno, easily mix it in only one direction.
- You can also save your time to cooked it in microwave. It's take about 5-6 minutes.
