Best Chole bhature recipe 

When we hear chole bhature we are reminded of Delhi. Chole bhature is a comfort food for everyone. If we talk about the Sunday branch or for lunch or dinner, chole bhature is a perfect choice. It never disappoints us in taste. Let's see how to make  Delhi type chole bhature at home.


Ingredients:

For chole:

  • 2 cup chana( shole)
  • 2 large onion ( finaly chopped)
  • 2 tomato ( pureed)
  • 2 green chillies( chopped)
  • 1 tbsp ginger-garlic paste 
  • 2 tbsp chole masala
  • 1 tbsp cumin seeds 
  • 1 bay leaf
  • 1 black cardamom 
  • 2 cloves
  • 1 tsp red chilli Powder 
  • 1/2 tarmaric powder 
  • 1 tsp garam masala 
  • 1 tsp amchur powder 
  • 2 tbsp oil
  • Fresh coriander leaves 
  • Salt for taste 


For bhature 

  • 2 cup maidan
  • 2 tbsp rava/semolina( optional)
  • 1 tsp sugar
  • 1 tsp baking soda
  • 1/4 cup yogurt ( curd)
  • Water as you need
  • Salt to taste 
  • Oil for deep frying

Let's make it:

Prepration for chole:

 Step 1: Soak and cook the chickpeas

If you are using dry chickpeas then soak them overnight. While boiling add a little salt and boil till they become soft. If you are using soaked chickpeas then they will rise well.

 Step 2: Prepare the base

Heat some oil in a large pan, add sumin seeds and bay leaves and let it sizzle for a few minutes.

Step 3: Saute onions and spices:

Then add chopped onion and green chillies and stir till it gets golden brown. Then add ginger garlic paste in it and let it cook.

Step 4: Add tomatoes:

Then mix tomato and cook until masala and oil separate. add turmeric powder, red chilli powder, garam masala, chole masala or let it cook for a well for few minutes.

step 5: Combine chickpeas:

Then add boiled chole to the masala and stir. Then add some water as per your requirement of gravy, thick or thin. Then let it cook for 10-15 minutes so that it adds flavour.

 Step 6 :Garnish

Your chole is ready, garnish it with fresh coriander leaves and serve with bit lemon juice.

 Prepration for bhature:

Step 1 :Prepare the dough:

Add some comfort flour (maida), semolina (semolina), salt, baking soda and yogurt in a mixing bowl and add some water and make a ball. Then keep it aside for 1-2 hours.


Step 2 :Roll out the bhature:

Once the ball has rested, divide it into small balls and roll each ball into a flat circle.

Step 3:  Fry the bhature

Heat oil in a frying pan and fry each bhatura one by one on a medium flame till they puff up and become golden brown in color from both the sides.

Serva and enjoy:
