Tawa pulao is an Indian Mumbai style street food. It is made in less time and is so delicious. No matter how much it is eaten, it does not satisfy the heart. Its smoke, flavor and spice spices have such a taste that it always lingers on the tongue. Why tawa pulao always hit:

The recipe of tawa pulao is always a favourite street food. In Mumbai, in a big pan, different dishes like pav bhaji, ragda, masala pav etc. are made on top of the pan. In the same way, pulao is also made. This recipe which is made in 15-20 minutes with some vegetable or rice is liked by everyone.There is a flavour added to this tawa pulao that makes people go crazy. It is like adding smoke flower to it. It is the same as we added to our dal tadka recipe. It is because of this taste that tawa pulao is so hit.

Ingredients:

  • 2 cup rice ( leftover rice or fresh rice that  cooled)
  • 2 tbsp ghee ( you can use oil also)
  • Vegetable:
  • 1 large size Onion( finaly chopped)
  • 2 large size tomato ( finaly chopped)
  • 1 Medium size capsicum ( chopped)
  • 1/4 cup green peas ( fresh or frozen)
  • 1/4 cup finaly chopped carrots 

  • 4-5 Green chillies ( adjust accordingly to your choice)
  • Cumin seeds 

  • 1 tsp ginger garlic paste 
  • 1.5 tsp pav bhaji masala 
  • 1/2 tsp red chilli powder 
  • 1/4 tsp turmeric powder 
  • Salt as per taste
  • Fresh coriander leaves 
  • Lemon juice 

How to make it step by step:

Cook the rice:

First add 2 cups of water in a pot and add some salt and 2 cups of rice. I will also add some cloves so that the rice does not become sticky And it will be a spicy style rice. Once the rice is cooked, keep it aside to cool.

Heat a tawa:

  • Then take a large pan, if you don't have pan then you can use flat bottom pan. And let it heat on medium flame. 
  • Then add 2 tbsp butter in it and let it melt and add some oil so that your butter doesn't burn.
  •  Then add a cumin seeds and let them sizzle, then add chopped onion and cook till it turns golden brown. Then add ginger garlic paste and add green chillies and let it cook for 2-3 minutes.

Add vegetable:

Then add chopped tomatoes and let it cook till it becomes soft and mushy. Then in that case add capsicum, green peas, carrot. And saute the vegetables for 5-6 minutes until are tender.

Spice it up

Whenever all the vegetables are cooked, we may add pav bhaji masala, red chilli powder, turmeric powder and salt, add mixed well or cook till the masala or vegetable is mixed well together or it can be smell the beautiful spices aroma.

Add rice:

And this is the time when we will add rice to it. And we will mix it well. Till the vegetables and spices get mixed with the rice. But do not over cook it so that the rice does not breake.

Finish garnish:

Then add some lemon juice to it add different flavours in pulao and garnish it with fresh coriander leaves.

Serve hot:

Now your Tawa Pulao is ready. Serve it by pouring butter on it. Hot street style Tawa Pulao.

Tips for perfect tawa pulao:

Use a large pan or tawa:

On a tawa or flat pan the vegetables and masala are thoroughly cooked and the pulao has a nice smokey flavour added to it.

Adjust a spice level:

You can add green chillies and red chilli powder as per your choice to make the pulao spicy.

Add extra butter for rich flover:

Tawa Pulao is non for butter and tastes good. So don't be stingy in adding butter.

Experiment with Vegetables:

Feel free to add vegetables like corn, cauliflower or even paneer for extra flover texture.

Variations to try:

Paneer  tawa pulao :

For paneer pulao add paneer cubes to the pulao it is a power- paked of protein. Fry the paneer cubes lightly before adding them.

Mashroom tawa pulao:

You can also add mushrooms at this time along with other vegetables, this will add earthy flavor to your pulao.Fry them along with other vegetables.

 Sweet corn and Cheese tawa pulao:

Add boiled corn and grated cheese to it while serving. This will add sweetness and creaminess to the pulao.

Spicy tawa pulao:

If you want spicy tawa pulao then add more green chillies and red chillies powder to it.

 Mixed Beans tawa pulao:

Beans, chickpeas and black beans are added to cooked vegetables. This adds fibre, protein and makes more filling.

Spicy shegwan tawa pulao:

Add 1-2 tbsp of pulao this will add my spicy Indo Chinese flavour to your pulao. And works great with extra crunchy veggies.

Serve with some cool cucumber raita and plain yogurt to balance the spice.

You can also serve it with papad. I serve it with rice papad, javari papad, or lijat papad.

You can also serve it with mango pickle, lemon pickle or fried chillies.

You can also serve it with cucumber and tomato salad.
