There is one more secret "tadka" - adding a tadka of spices in ghee or oil gives a wonderful taste to the taste.


Ingredients you'll need:

 For dal:

  • 2 cup toor dal
  • 2 cup water
  • 1/2 tsp turmeric pawder 
  • Salt for taste 

For Tadka:

  • 2 tbsp ghee/ oil
  • 1 tsp cumin seeds 
  • A pinch of hing
  • 2-3 dry red chillies 
  • 1 medium-sized onion ( finaly chopped)
  • 1 medium size tomato ( finaly chopped)
  • 4-5 garlic cloves ( finaly chopped)
  • 1 inch peas of ginger- grated 
  • 2 green chillies 
  • 1/2 tsp red chilli Powder 
  • 1/2 tsp garam masala 
  • Fresh coriander leaves- chopped for garnish 
  • 1 tbsp kasuri methi 

For smoke effect:

  • 1 pics of carcolic
  • 1 tbsp ghee

Let's see how to make it step by step:

Step 1: Cook the Dal

Rinse the dal:
Wash toor dal thoroughly in a bowl so that the starch inside it is removed. This will prevent your dal from becoming thick and sticky.

Cook the dal:
Then add toor dal, 3 cups water, turmeric powder and salt in a pressure cooker and let the dal cook on a slow flame for 3-4 whistles until it becomes soft and mashed. If you do not have a pressure cooker then cook it in a pot.

Set aside:
Once the lentils are cooked, mash them to get the consistency. Then keep them warm until you prepare the tadka.

Step 2: Prepare the Tadka:

   Heat a oil/ ghee:
Heat oil/ghee in a heavy bottom pan on medium flame. Then add sumin seeds in it and let it sizzle. Then add a pinch of asafoetida and add dried red chillies in it.

Saute onion and tomato:
then add chopped onion and let it cook till it becomes golden brown. then add tomatoes and let it cook till it becomes soft and let the oil separate.

 Add spices:
Then sprinkle red chilli powder and garam masala on it and let it cook a little.Then crush Kasuri Methi in your palm and add it in the morning for earthy flover.

Step 3: combin masala and dal:

 Mix it together:
Once the tadka is ready, put the lentils in the pan and mix it thoroughly. You can add some water to it if you like, if it is thick or thin.

Simmer:
Then cook it on low flame for 5-10 minutes and add beautiful flovers in it.

Step 4: Add smoke flovers:

To add smoke flavour to the dal tadka, burn one pices of fresh charcoal on low flame, then put it in a bowl and put one drop of ghee in the dal pan on the charcoal and keep the pot on fire so that smoke flavour gets added to it.

Step 5: garnish & serve :

Now you dhaba style dal tadka is ready garnish with fresh chopped coriander leaves and fresh lemon juice and serve with same butter on top.

Pro Tips:

Ghee is a key:
Add ghee instant of oil it's gives the rich flover to your meal.

 Smoke flover: 
Do not skip the carcol smoke technique, this will bring a different restaurant flavour to your heart.

Add spices:
You can add spices as per your taste. If you like more spices then you can add more chillies during tempering or while cooking lentils.

 Maintain consistency:
Dhaba style dal tadka usually has a consistency neither too thick nor too thin. You can add water as per your choice to mean the consistency.

What to serve with dhaba style dal tadka:

Dal Tadka is a versatile dish which you can eat with anything. But there are some dishes with which eating Dal Tadka gives a different pleasure.

Jeera rice:
Adding some sumin seeds tadka to basmati rice gives a different flavour to cumin rice, this is a best combination.
