Ingredients:
- 1 cup poha or flattered rice
- 2 medium size batato ( boiled an mashed)
- 1 medium size carrat ( finaly chopped)
- 1 medium size onion ( finaly chopped)
- 1 medium size capsicum (finaly chopped)
- 1-2 green chillies ( finaly chopped)
- 1/2 inch ginger ( grated)
- 1/2 tsp cumin seeds
- Fresh coriander leaves ( chopped)
- 1/4 tsp tarmaric powder
- 1/2 tsp chaat masala
- 1 tbsp lemon juice
- Salt to taste
- 1/4 cup breadcrumbs ( for coating)
- Oil to fry
Let's see how to make it:
Step1: Preparing the Poha Mixture:
Rinse the Poha:
Start washing the poha properly. First wash the poha till it becomes soft. After that drain out the excess water. Be careful not to soak it in water.
Cook the Vegetables:
First heat oil in a small pan then add some cumin seeds and let them sizzle. Then add ginger and green chillies and saute for a few seconds.
Add Vegetables:
Then add chopped onions, capsicum, carrots and a punch of salt. Then let the low flame cook until it becomes soft.
Step 2: Mixing the Ingredients:

Then in my bowl I may add softened poha and add boiled potato, sauté vegetable, turmeric powder, chaat masala, lemon juice or fresh coriander leaves.
Add Bread Crumbs:
Then mix everything together and add some breadcrumbs at the same time, this will prevent your rolls from breaking while frying and the shape will be proper.
Mix Well:
Then mix your mixture well with your hands until it becomes smooth. Make sure that the is not sticky dough. If your ball is wet then add some more breadcrumbs to it.
Step 3: Shaping the Rolls:
Then take small portions of the mixture and give it cylindrical and circle shapes. Continue this process until all your mixture is cooked.
Step 4: Cooking the Poha Rolls:
Heat 2-3 tbsp oil in a non-stick pan for shallow frying. Then add the same roll and fry on medium flame till it becomes golden brown and crispy. This takes approximately 8-10 minutes. Once the roll turns golden brown, remove that roll from the oil and keep it on a pepper towel so that excess oil drains out.
Step 5: serve:
Now your poha roll is ready, you can serve it like we served panner cutlet. With green chutney and tomato sauce. add a side salads, add simple cucumber, tomato in platter it's adding freshness in your plate.
